Ingredients
- 1 cup of vegetable oil
- 3 lightly beaten eggs
- 3 cups of whole wheat flour
- 2 1/4 cups of white sugar
- 2 cups of shredded zucchini
- 3 teaspoons of vanilla extract
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 1 tablespoon of ground cinnamon
- 1/4 teaspoon of baking soda
- 1 pint of fresh blueberries
Preparation
1) Preheat your oven to 350ᵒF. Grease 4 mini-loaf pans lightly.
2) Mix the eggs, vanilla, oil, and sugar in a large bowl. Add the zucchini and continue mixing. Beat in the cinnamon, salt, flour, baking powder, and baking soda. Fold in the blueberries.
3) Transfer the mixture to the pans. Bake for 50 minutes or until a knife inserted in the middle comes out without particles.
4) Leave the breads to cool for 20 minutes in the pans. Transfer them to cooling racks and leave for 2 hours before slicing.

1) You can substitute the sugar for sucralose brown sugar blend which is healthier.
2) To make the bread sweeter, sprinkle powdered sugar on top.
