Directions
- Preheat the oven to 180°C.
- In a glass bowl mix flour, icing sugar and cornflour.
- Next mix in cold butter cubes and almond flour. Stir until the butter mixes well with the other ingredients.
- Now add chopped glace cherries and almond extract into the above prepared mix and blend well to get a dough consistency.
- Now roll the dough into a thin flat sheet and cut heart shaped biscuits using a heart shaped cutter. Use all of the dough to make heart shaped biscuits.
- Line the biscuits on a parchment paper lined baking tray and bake for 8 to 10 minutes at 180°C. By the end of it, the biscuits should become pale golden.
- Take them out and puncture a small circle in the centre using a small cutter. Fill the hole with cherry jam.
- Return to the oven and bake for another 2 to 3 minutes. Cool the biscuits on a wire rack.
- Dust with icing sugar before serving.
Instead of using cherry jam as a topping, you can also use a chocolate dip instead. You can try a variety of cutter shapes too! For instance, you could make round biscuits with heart shaped centres. Be free to use shapes that your beloved loves. You can also sandwich the cherry jam in between two biscuits and make a sandwich biscuit. Let your imagination run wild and just bake! Do share your thoughts on this one!
