Directions
- Preheat your oven to 375 degrees F. With your cooking spray or oil, grease the muffin tin very well.
- Drain the ground beef and season it with salt and pepper. Brown the ground beef in a pan on a medium heat.
- While the ground beef is browning, take out the wonton wrappers and using a biscuit cutter or the top of a drinking glass- cut them into circle shapes (about 2 ¼ – inches) . If you would you can cut several at a time.
- Save the ¾ cup of Parmesan cheese and the ¾ cup of Mozzarella cheese for the top of your cupcakes. Begin layering your lasagna cups, by starting with a wonton wrapper and press it into the bottom of each muffin tin, sprinkle a little Parmesan next, followed by ricotta cheese, and mozzarella cheese in each. Then top the cups with a little meat and pasta sauce.
- Repeat the layering process for the rest of the cups (wonton, Parmesan cheese, ricotta, mozzarella, and pasta sauce). Now top it off with the Parmesan Cheese and Mozzarella Cheese that you saved from earlier.
- After you have finished with all of the layering, put the cupcakes in the oven and bake them for 18-20 minutes or until the edges of the cups are brown. Then remove from your oven and let them cool for 5 minutes. To remove the cupcakes from the tin use a knife to loosen the edges then pop each lasagna out and place on a plate.
- Now comes the optional ingredient, leaving the tops of the cupcakes with a garnish of basil then serve.
