The word ‘Mother’ comes with an emotion of unconditional love. So what should a Mother’s Day Recipe be about? ‘Love’, of course! Keeping that in mind, let us enlist a few ingredients that are all about love. I can straight away think of three-Chocolates, Strawberries & Cream! What a delightful combination these three would form! Also, I would love to add some crunch, to add a little fun and interest. Our todays recipe stands for unconditional love with a dash of fun-a perfect treat to present your mom with, this Mother’s Day.

Mother’s Day Recipe: Chocolate Waffles With Strawberries

Ingredients

5 tbsp unsalted butter

2 cups all purpose flour

1 tbsp baking powder

3 tbsp sugar

1/2 tsp salt

3 eggs

1 cup milk

1/2 cup chocolate syrup and additional for topping

1/2 tsp vanilla extract

Cooking Spray

Confectioners sugar

1 cup whipped cream

1 cup strawberries, each sliced into half

Directions

1. Mix flour, salt, baking powder and sugar in a bowl.
2. In a saucepan melt the butter.
3. In another large bowl whisk eggs, milk, chocolate syrup and vanilla. Now fold in the flour mix into the egg mix spoon by spoon. Now add molten butter to it and mix well.
4. Pre-heat the oven to 250ºF.
5. Pre-heat waffle iron and spray some cooking spray over it.
6. Add some batter into the waffle iron, about an inch within the edge. Cook until crisp.
7. Repeat to finish the batter.
8. Transfer on to a baking sheet and keep it warm in the oven.
9. Place the waffles on serving plates. Sprinkle with confectioners sugar. Now add strawberries, freshly whipped cream and chocolate syrup. Dust with a little bit more confectioners sugar.
10. Serve!

Your mom is simply going to love this Mother’s Day Recipe that you will prepare with so much love. I have seen people add sliced bananas to the chocolate waffles and strawberries. That tastes great too. Another variation is to serve along with pancakes. If you are not a big fan of whipped cream then add a dollop of vanilla ice-cream! In this case you can leave out the last sugar dusting. And of course if you want to add some more love, increase the chocolate syrup content. Do share your thoughts on this recipe.

Lemon Blueberry Muffins Recipe

Easy Blueberry Muffins Ingredients

• ⅛ tsp of fine salt
• ½ tsp of pure vanilla extract
• ¾ cup of sugar (and a little extra for sprinkling on top)
• 1 cup of unsalted butter (1 stick)
• 1 tbsp of lemon zest (finely grated)
• 1 cup of whole milk
• 1 tbsp of baking powder
• 1½ cups of fresh blueberries (rinse and dry them)
• 2 large eggs
• 2½ cups of all-purpose flour
• Freshly-grated nutmeg

Blueberry Muffins Directions:

1. Heat your oven to 425⁰ Place 12 cupcake liners in a muffin tin.
2. Mix the baking powder, sugar, salt, nutmeg, and flour in a bowl. Set aside.
3. Melt the butter in a microwave. It should melt in about 30 seconds.
4. Mix the butter, eggs, milk, vanilla, and lemon zest in a bowl.
5. Make a small hole in the middle of the dry mixture and pour the wet ingredients inside.
6. Stir the mixture with a wooden spoon till it is moist but still lumpy. Avoid over-mixing because your muffins will be dense if you do.
7. Add the blueberries. Pour the mixture into the muffin tin and divide evenly. Sprinkle sugar on top generously.
8. Put the muffin tin in the oven and decrease the temperature to 375⁰
9. Bake till the muffins turn golden brown (for about 25 minutes). Rotate the tin halfway through baking. Test one of the muffins with a toothpick. If it comes out clean, they’re done.
10. Remove the tin from the oven and place it on a rack to cool.
11. Remove muffins and serve.

Mothers Day Flowers Directions:

1. Place 2-4 tissues on top of one another. If you have 3 ply tissues, use 3.
2. Fold the tissues accordion style and clasp them with a bobby pin in the middle.
3. Pinch off the ends with your fingers then color them with a marker pen.
4. Separate each layer of tissue up to the center but be careful not to tear it. Start with the topmost tissue and work your way down. Repeat this process for the other tissues.
5. After you are done, fluff the tissues
6. Remove the fake flowers from the branches.
7. Pinch the bobby pins separately and wrap them with floral tape.
8. Place the bobby pins on the bare stems and wrap them with the tape. Make sure they are well hidden so only the flowers are visible.
9. Repeat the process for each flower until you create a bouquet.

Healthy habits are becoming harder and harder to keep, as our lives get busier, am I right? It’s amazing how many tasks, jobs, and hats we as mothers, daughters, sisters and grandmother’s take on in a typical day.  My daughter reminds me everyday, “Life Is Why.” She shows me how making time to exercise, eat healthy, get more rest, and get off of the computer on a regular basis are all healthy habits for me, but that in turn transform my family.

Make your “Life is Why” Image!

American Heart Association has created the  #LifeIsWhy campaign to help mothers like you and me determine what is the reason you want to live a longer and healthier life? They have some great resources to help you get healthy… before I share them with you, here’s my story…

I come from a family where obesity is the norm rather than rare. Most of my life I carried at least 75-100 pounds of extra weight, until 2005 when my father passed away from complications with diabetes. After the birth of my daughter at the end of 2005 I vowed to get healthy to be able to live a longer life, and see my daughter grow to have her own family.

I lost 75 pounds and have kept it off by eating healthy and exercising:

• I visited a blood chemistry doctor to find out what foods my body wasn’t digesting well. I found out that wheat, blueberries, spinach, carrots and celery were all causing my blood sugar to spike and therefore I could never lose weight.
• I joined my local gym and started exercising 3, then 4, up to 6 days a week now for an hour a day.
• I installed a health app on my phone to track my progress and got a fitness tracker to track my daily steps.
• I asked my husband and daughter to join me in getting healthy and we made family eating lifestyle changes as well as played a family-friendly dance-off video game each week to exercise together.

What healthy habits can you start today? Here are a few suggestions:

• Increase consumption of fruits and veggies
• Decrease consumption of sodium
• Decrease consumption of sugary sweetened beverages
• Increase physical activity
• Check and control blood pressure
