Olives and tomatoes are basic ingredients in many Mediterranean dishes. Here is one that combines both of them to make a delicious chicken dish. This light dish is filled with flavor and yumminess. It is prepared in a slow cooker, which makes it a great, easy to make meal.
Slow Cooker Meal: Chicken with Olives and Roasted Tomato

Ingredients
- 12 skinned chicken thighs skinned
- 1 teaspoon kosher salt, divided
- 1/4 teaspoon freshly ground black pepper, divided
- 1 teaspoon olive oil
- 1 1/2 tablespoons minced garlic
- 1/4 cup dry white wine
- 3 tablespoons tomato paste
- 2 to 3 teaspoons crushed red pepper
- 1 (28-ounce) can diced tomatoes, drained
- 1/4 cup sliced pitted kalamata olives
- 2 tablespoons chopped fresh flat-leaf parsley

Preparation
- Sprinkle the chicken with 1/2 teaspoon salt and 1/8 teaspoon black pepper.
- Heat oil in a large skillet over medium-high heat and add the chicken to pan. Now cook for about 2 minutes on each side or until browned.
- Place chicken in an electric slow cooker.
- Add the garlic to pan and sauté for about 30 seconds, while stirring constantly. Add the wine, and make sure to scrap the pan to loosen browned bits; cook for about 30 seconds. Place the wine mixture into the slow cooker. Add the tomato paste, the crushed red pepper, and the tomatoes to the cooker. Cover the cooker and cook on high for 4 hours. Before serving the dish, stir in the remaining 1/2 teaspoon salt and the remaining 1/8 teaspoon pepper, the olives, and finally the parsley.
A great addition for this delicious meal is to add a few capers together with the olives. Just make be careful with the salt, since capers can add saltiness to the dish. To accompany the dish, try a nice green salad or some pasta or rice. They will turn out great with the sauce. Thanks My Recipes for this great recipe.
