Spring Dessert: Lemon Meringue Pie

Ingredients:
Meringue Topping
- 2 tbsp. of sugar
- 1 pinch of cream of tartar
- 4 egg whites (set the yolks aside)
Lemon Filling
- ½ cup of lemon juice
- ¼ tsp. of salt
- ⅓ cup of cornstarch
- 1 ½ cups of water
- 1 ⅓ cups of sugar
- 3 tbsp. of butter
- 1 tbsp of lemon zest (finely grated)
- 4 egg yolks
- 1 pre-cooked pie shell (9-inch)
Directions:
Meringue Topping
- Put the cream of tartar and egg whites in a stand mixer’s bowl. Beat with the whisk attachment.
- Keep on beating until soft peaks form then add sugar gradually. After 1-2 minutes, stiff peaks will form. Use to top lemon filling.
Lemon Filling
- Place the oven rack in the middle position. Preheat your oven to 375⁰
- Beat the egg yolks in a mixing bowl and set aside.
- In a saucepan, mix the sugar, salt, water, and cornstarch. Cook the mixture over medium heat and keep stirring till boiling point.
- Remove from heat and add a small portion of the mixture to the egg yolks at a time. Stir until you’ve added all of the mixture.
- Return the mixture to the saucepan and cook over medium heat as you stir. Remove the saucepan from the heat and add the lemon juice, zest, and butter as you stir.
- Put the mixture in the pie shell and cover with meringue topping. The topping should completely cover the filling.
- Bake the pie for 10-12 minutes or till the meringue is golden. Remove it and place it on a wire rack to cool. Slice and serve.
