Summer is a season of fruits. These fresh juicy delights add a lot of flavor to the otherwise weary summers. Most of you would agree with me when I say that fruits are best incorporated with summer desserts. Their slight tanginess along with the sweetness brings about great dessert qualities. The recipe that I share with you today, incorporates juicy raspberries with sweet and tangy cherries. The soft pavlova skin adds a beautiful silky soft feeling to the dessert and all in all you get a summer dessert that melts slowly in your mouth. So bring on the kids and family and whip out this amazing fruit dessert.
Summer Dessert: Cherry and Raspberry Pavlova Rolls Recipe

Ingredients
125 g fresh pitted cherries
1 small box of raspberries
150 g lemon meringue Fruche
175 g double cream
175 g caster sugar
4 egg whites
1 tbsp dried and powdered coconut
1 tbsp icing sugar

Directions
- Preheat the oven to 150°C. Take a swiss roll tray, about 8” X 12” and line it with a non stick baking sheet.
- On your kitchen shelf place another non stick baking sheet. Make sure the shelf top is clean and moisture free. Sprinkle the baking sheet with icing sugar and coconut powder.
- In a large glass bowl, beat 4 egg whites. Beat until stiff peaks are formed.
- To the beaten egg whites add caster sugar, spoon by spoon, beating the mixture properly after adding every spoon of sugar.
- Spread this mixture on the swiss roll tray and bake for ten minutes.
- Transfer this meringue onto the coconut and sugar lined baking sheet. This is your pavlova.
- Whisk the cream to form soft peaks using a balloon whisk. Take care not to overheat the cream.
- Now carefully add the lemon meringue fruche into the cream.
- Spread the cream ruche mix onto the pavlova. Scatter the cherries and raspberries over the cream.
- Now carefully roll the pavlova and cut it into slices before serving.
This summer dessert can be prepared with only cherries or only raspberries too, in case you are not fond of very complex flavors. You can experiment a bit and add strawberry sauce on the cream topping for that extra sweetness. Fruit jams also complement this recipe very well.
