Tasty Appetizer: Marinated Lamb Kebabs Recipe

Tasty Appetizer: Marinated Lamb Kebabs

Ingredients

• ¼ cup of olive oil (plus a little extra for brushing the grill)
• ¼ cup of fresh lemon juice (2 lemons)
• ½ tsp. of freshly ground black pepper
• 1 red onion
• 1 tsp. of kosher salt
• 1 tsp. of lemon zest
• 1 pound of regular yogurt (or lowfat)
• 2 pounds of top round lamb
• 5 tbsp. of fresh rosemary leaves.

Procedure

1. Mix the yogurt, lemon juice and zest, olive oil, salt, pepper, and rosemary in a large bowl. Add the lamb and roll it around to make sure it is covered with the marinade.
2. Cover the lamb with a plastic wrap and put it in the refrigerator. Leave overnight or up to 2 days.
3. Prepare your charcoal grill and spread the coals to form a single tight layer.
4. Cut the lamb into cubes. 2 pounds of top round lamb should produce about 20 cubes.
5. Cut the onion into 8 pieces and detach each piece into 3-4 sections.
6. Place 3-4 pieces of lamb on a skewer and alternate them with pieces of onion.
7. Sprinkle salt and pepper on the lamb cubes and onions.
8. Place the skewers on the grill and cook them for approximately 10-15 minutes. Turn them 2-3 times to ensure they are thoroughly cooked.
