Procedure:

  1. Chop the onion and garlic very finely.
  2. Sauté the onion and garlic over low heat until the onion is translucent and the garlic becomes fragrant.
  3. Add in the tomato paste. Use the beer to thin out the  paste until it becomes the consistency of ketchup.
  4. Stir in the cider vinegar, brown sugar, Dijon mustard, Worcestershire sauce, paprika, lemon juice, and red pepper flakes.
  5. Cover the mixture and allow it to simmer for 10-15 minutes, until it thickens into the consistency of a barbeque sauce. Adjust seasonings to taste. (Note: If stored in an airtight container and refrigerated, this sauce will last for up to a week. Feel free to make it in advance.)
  6. When ready to make the sliders, dry the pork butt thoroughly with paper towels and season it generously with salt and pepper.
  7. Put the pork into a slow cooker and top it with the barbecue sauce. Cook on high for 5 hours or on low for 8 hours.
  8. Before serving, use two forks to shred the pork into pieces.
  9. Pile the pork high onto the Hawaiian slider rolls. Garnish with a dollop of coleslaw and two pickle slices.

The rule of thumb for finger foods like sliders is to make sure you prepare enough for each guest to have three pieces. This recipe will comfortably serve 7-8 people, but it could easily be doubled to feed a crowd. In fact, err on the side of caution with this one. These slow cooker pulled pork sliders are so delicious that your guests will be begging for more.
