Breakfast Treat: Lemon Poppy Seed Donuts

Ingredients
For the donuts
- ½ cup of sugar
- ½ cup of whole milk
- ½ tsp. of salt
- 1 large egg
- 1 tbsp. of poppy seeds
- Zest from 1 lemon
- 1½ tsp. of baking powder
- 1½ cups of all-purpose flour
- 2 tbsp. of sour cream
- 6 tbsp. of unsalted butter
For the Icing
- 1½ cups of powdered sugar
- Juice from one lemon (or 2 tbsp.)
Instructions
For the Donuts
- Preheat your oven to 350ᵒ and grease the donut pans.
- In a bowl, mix the sour cream and milk. Set aside.
- In a separate bowl, mix the flour, salt, and baking powder. Set aside.
- Mix the butter and sugar in a large bowl or a stand mixer. When the mixture becomes light and fluffy, add the egg, poppy seeds, and lemon zest. Beat for about 30 seconds and scrape the bowl where necessary.
- Add the milk and flour mixture and mix all the ingredients until they are well combined.
- Put the mixture in a piping bag or a ziplock bag and cut off the tip.
- Fill each donut indentation in the pans halfway full.
- Bake for 6-8 minutes or until the donuts turn brown. They should spring back when touched.
- Remove the donuts from the oven and place them on a cooling rack.
For the Icing
- In a bowl, mix the powdered sugar and lemon juice until smooth.
- Dip the top of each donut into the glaze and place on a wire rack till dry.
- Leave for about 10 minutes then serve.
