The best thing about making layered bars is that you get the opportunity to mix different delicious ingredients into one delectable dessert recipe. That is the case with Raspberry Coconut Bars. They have a solid layer beneath, a lovely raspberry layer, and a chewy top filled with plenty of coconut. These bars are perfect for fall dessert, summer picnics, or as accompaniments to tea and coffee. They are a versatile dessert and you’ll be hard pressed to find anything similar. Fall Dessert: Raspberry Coconut Bars

Ingredients
1/4 tsp of baking powder
1/2 of vanilla extract
1/2 cup of walnuts (chopped)
1 egg
1 cup of sugar
3/4 cup of softened butter
1 cup of white baking chips
1 jar of raspberry preserves (or 12 ounces)
2 cups of flaked coconut (divided)
2 cups of all-purpose flour
Procedure
- Mix the sugar and softened butter in a large bowl until the mixture is light and fluffy. Add the vanilla and egg. Mix the flour and baking powder separately then add the blend to the sugar mixture. Mix well then add the walnuts and 1 cup of coconut.
- Put ¾ of the dough into a greased baking pan. Spread the preserves then sprinkle the white baking chips and remaining coconut on top. Crumble the remaining dough on top and press slightly.
- Bake at 350ᵒ for approximately 30 minutes or until it becomes golden brown.
- Place on a wire rack and leave to cool then cut into bars. For clean cuts, leave to cool overnight in the fridge then slice with a warm knife (run the knife under hot water).
