When you think of fall; pumpkin and turkey comes to mind at once. Better yet? Chili! So, why not combine the three ingredients into a delicious and satisfying autumn dish? I know it does not sound appetizing, but trust me, it is unbelievably yummy and super easy too! Perfect for fall dinners, weekend suppers or any time you are carving comfort food, pumpkin turkey chili can be served on the table in flat 30 minutes.
Fall Dinner: Pumpkin Turkey Chili

Yields: 6 servings
Ingredients
1 table spoon vegetable oil
1 cup onion, diced
½ cup green bell pepper, chopped
½ cup green yellow pepper, chopped
1 pound ground turkey
1 garlic clove, minced
14 ounce diced tomatoes
2 cups pumpkin puree
1 tablespoon chili powder
½ teaspoon ground black pepper
Pinch of salt
½ cup shredded cheddar cheese
½ cup sour cream

- In a large frying pan, heat the oil, and sauté onion, garlic, yellow bell pepper, green bell pepper until tender.
- Add turkey, stir and cook until brown.
- Drain and add tomatoes and pumpkin puree. Mix well.
- Season with salt, pepper, and chili powder.
- Reduce heat to low, cover with a lid, and simmer for 15 minutes.
- Garnish with cheddar cheese or sour cream. Serve warm. Other topping options are cilantro, chives or anything, really.
Note: Pumpkin turkey chili can also be made in a crock pot. After the second step, put turkey and remaining ingredients in a slow cooker. Cook on low for 8 hours.
Embrace the cooler weather with this absolutely delicious fall dinner dish. Even though this recipe does not call for beans, feel free to add and tweak it to your liking. If you want your chili to be dinner, just add in some low sodium chicken broth to get the consistency you are looking for.
