Ingredients
4 servings
8 medium leeks (tough green parts trimmed)
Parsley (8 sprigs)
1 chopped hard-boiled egg
Peanut oil (7 tablespoons)
Dijon mustard (2 teaspoons)
Red wine vinegar (5 tablespoons)
White pepper (freshly ground), to taste
Kosher salt, to taste

Preparation
- Slice leeks lengthwise, starting at least one-inch above the root end.
- Open leeks like a book and wash well in cold water. Check if there is any dirt or sand. For having the best result, wash in running water.
- Add water and salt in a 12″ deep-sided frying pan and bring to a boil. Now, add leeks and cook over a medium heat for 6 minute until the leeks are soft but not sappy.
- Stop the heat and transfer the leeks to a bowl full of ice water. Halve the leeks in lengthwise and transfer to a rack. Keep them there for a while with their cut side down so that they drain completely.
- Take a small bowl and whisk vinegar, pepper, salt, and mustard together in it. Whisk while keep adding oil until the vinaigrette is creamy and smooth. Set aside after adjusting seasonings.
- Take 4 parsley sprigs and remove the leaves. Chop the leaves and set aside.
- Take 4 salad plates and place on a leek-half on each of them. Then, drizzle vinaigrette and sprinkle with chopped eggs and parsley leaves. At last, garnish each plate with the parsley sprigs.
