Summer Dessert: Triple-Crust Ripe Peach Cobbler Recipe

Summer Dessert: Triple-Crust Ripe Peach Cobbler

Peach cobbler recipe – try a lattice style or cover the entire dish with crust

Ingredients

3 packets of pie crust mix

1½ cups of sugar

1 cup of cold water

2 tsp of vanilla

2 tsp of crushed nutmeg

2 tsp of crushed cinnamon

2 tsp of lemon extract

2 cans of sliced peaches in syrup (undrained)

¾ cup of margarine or butter (melted)

Procedure

1. Heat your oven to 350ᵒF. Mix 1 packet of pie crust and ⅓ of the water in a bowl until the combination forms a ball. Roll out the ball into a rectangle and cut it into 4 even strips. Place the strips on a cookie sheet that is ungreased and bake for 18 minutes. Remove and set aside.

2. Mix the second packet of pie crust with ⅓ of the water. The mixture will form a ball after a while. Flatten it and roll it to fit the base and sides of a rectangular baking dish. Don’t grease the dish, just place the crust and set aside.

3. In a large bowl, mix the butter, sugar, cinnamon, nutmeg, peaches, vanilla, and lemon extract. Pour half of the mixture in the baking dish. Place the four pastry strips on top and pour the remaining mixture.

4. Mix the last packet of pie crust with the remaining water until the mixture becomes round. Flatten it and roll it to fit the top part of the baking dish. Make several slits on the crust and place it on top of the mixture in the baking dish. Seal the edges of the dish.

5. Bake the mixture for an hour or till the crust turns golden brown.
