Healthy Winter Recipe – Tropical Flavored Kiwi Fruit Salad Recipe

If you are bored with your usual salad recipe, try this one, which is made of unusual combination of tropical fruits. Banish the flavorless tomatoes from your old salad recipe and spice it up with a unique combination of bananas and kiwis dipped in the pungent flavor of shallot vinaigrette. There is nothing like a healthy fruit salad recipe to accompany your favorite meal.

Ingredients

Served to 4 People

•    Sliced shallot (1 tablespoon)
•    Diagonally diced two firm, ripe bananas (each slice will be ½-inch thick)
•    Peeled and diced 4 kiwis
•    Toasted and chopped cashews (2 tablespoons)
•    Thinly sliced fresh mint (2 tablespoons)
•    Diced red bell pepper (½ cup)
•    Rice vinegar (2 teaspoons)
•    Lime juice (2 tablespoons)
•    Honey (1 teaspoon)
•    Canola oil (1 tablespoon)
•    Salt (¼ teaspoon)
•    Pinch of cayenne pepper

Preparation

•    Take a medium bowl and beat vinegar, honey, shallot, oil, lime juice, cayenne, and salt in it.
•    Add sliced bananas, kiwis, mint, and bell paper into the mix and toss to coat.
•    Sprinkle the salad with cashews and serve.

You can replace the red pepper with slice apple pieces, which will give the salad the crunch needed to harmonize with the delicate taste of the minced shallot. This salad is really very tasty, sweet, and a crowd pleaser. It can make warm and tropical inside when it is clod and dreary outside.
