With the Holiday season comes the cooler temperatures, so how about we warm it up with some good old fashion gumbo. Spicy Catfish Gumbo to be exact. This holiday recipe will give your tongue the jolt of spicy flavor it loves and your body the warmth it needs. Just give it one try and you’ll be begging for more.
Holiday Recipe: Spicy Catfish Gumbo

Ingredients
1 cup of Chopped Celery
1 cup of Chopped Green Pepper
1 cup of Chopped Onion
2 cloves of Garlic, minced
1/3 cup of Vegetable Oil
4 Beef-Flavored Bouillon Cubes
4 cups of Boiling Water
2 (16-ounced) cans of whole Tomatoes, undrained and chopped
2 (10- ounce) packages of Frozen Okra, thawed
1 (6-ounce) can of Vegetable Juice Cocktail
1 tablespoon and 1 teaspoon of salt
½ teaspoon of dried whole Thyme
½ teaspoon of ground Red Pepper
½ cup of Jalapeno Peppers, diced
½ teaspoon of Pepper
¼ teaspoon of Ground Bay Leaves
2 pounds of Farm-raised Catfish fillets, skinned and cut into 1-inch pieces

Directions
- First or your holiday recipe, start off with sautéing the celery, onion, green pepper and garlic in a pan with oil in a pan in a Dutch oven, until the vegetables become tender. Next, take the bouillon cubes and dissolve them in water and add the liquid into the vegetable mixtures.
- After you have added in the bouillon liquid; the stir in the tomatoes, frozen okra, vegetable juice cocktail, salt, thyme, ground red pepper, pepper, ground bay leaves and jalapeno peppers.
- Cover the combination of the ingredients and let in simmer on reduced heat for about 30 minutes, being sure to stir it frequently. When the gumbo has finished simmering, add in the fish and stir it well with the gumbo. Cover the gumbo again and let it simmer for 20 minutes.
- While the gumbo is simmering for the last 20 minutes, microwave some white rice. Once the rice is ready and the gumbo is done simmering for the last time then take the rice and place it in bowls and pour the gumbo on top and ENJOY!
