Apricot preserves and Feta Cheese on English Muffins

Ingredients
- 4 ounce block feta cheese
- 4 ounces cream cheese (at room temperature)
- 1 1/2 teaspoons good-quality olive oil
- 4 English muffins, split and toasted
- 1/4 cup apricot preserves
- 1/4 cup Marcona almonds
Directions
- Prepare all the ingredients and ensure the cleanliness of the cooking tools and utensils.
- Using an electric mixer, beat the cream cheese, feta cheese, and olive oil until soft and fluffy. Be careful in doing this step as you might spill out some of the ingredients and make a mess in your kitchen. Start with slow speed setting then slowly advance to the nest.
- Spread a dollop of the feta mixture in the English muffin and then followed by a dollop of apricot preserves and a few almonds. Make sure that you will distribute the apricot preserves and the almonds evenly so that all muffins have pieces of each bit. Continue with remaining English muffins.
