Do you have a picky eater or a toddler who is learning how to eat on its own? Then this is the recipe for you. It’s a healthy kid’s recipe that is both delicious and fun: Veggie Pancakes! The neat thing about kids recipes is that these easy veggie pancakes can be eaten both hot and cold, through all day, as a main dish or as a snack! What more can you ask for? Kids Recipes: Delicious Veggie Pancakes

Ingredients (8 servings)
- ½ cup all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon baking powder
- 1 egg
- 1 cup grated carrot
- 1 cup grated zucchini
- ¼ cup milk
- 2 sliced green onions
- 2 tablespoons oil
Directions
- To make this great kid’s recipe, combine in a bowl the flour, baking powder, pepper and salt by stirring.
- In a second bowl, beat the milk together with the egg and add the veggies. Mix well.
- Add the egg mix to the flour mix and stir until combined.
- Take a large skillet and heat half of the oil over medium heat. With a tablespoon, pour the batter into the pan and make a few pancakes at a time.
- Cook for about 2 minutes until each side is golden brown.
- If needed, add the rest of the oil and cook the remaining pancakes.
This kid’s recipe is easy to make variations to as desired. For example, you can add corn kernels or other vegetables like grated sweet potatoes or beets. Garlic would also taste great. Parsley, dill and other fresh or dried herbs can be used to add flavor. And of course, some cheese like cheddar could also be fitted into the batter.
Lastly, a great way to serve these delicious pancakes is to make a quick dip sauce, either by simply using some Crème fraiche with a few fresh herbs or by whipping together some sour cream and pesto, or even by using some healthy Greek yoghurt. Enjoy!
