Potato skins are some of the easiest and most delicious appetizers! In addition to recognizing those brave soldiers who have given their lives while serving the nation, Memorial Day is also one of the biggest grilling holidays of the season. To help you fire up the grill, we point you a Memorial Day appetizer that will not only get you salivating, but you can use it throughout the summer season. Try this grilled potato skin recipe and see if you don’t agree that it’s quick and simple to make, and even more fun to eat.
Memorial Day Appetizer: Grilled Potato Skins
Total time: 25-30 minutes
Yields: 4 servings
Ingredients
2 baking potatoes – white or sweet potatoes
2 tablespoon melted butter
½ teaspoon dried rosemary
Pinch of salt and pepper
1 cup cheddar cheese, shredded
2 slices bacon, cooked and crumbled
2 chopped, green onions
Sour cream
Directions:
1. Cut potatoes into 4 wedges. Hollow out the center of each wedge. Microwave potatoes, uncovered, on high for 6-8 minutes or until tender.
2. In a small bowl, combine rosemary, butter, salt, and pepper. Remove potatoes from microwave and brush over both sides of potato.
3. Put potatoes with skin-side up on the grill rack. Grill for 2-3 minutes, turn and grill again. Add cheese to potato wedges and cook for another 2-3 minutes.
4. Top off with bacon and onion. Serve with sour cream.
Just about everyone will love this delicious Memorial Day appetizer. You can also substitute low-fat cheese or add broccoli and other vegetables for a healthier option.
