New Year is coming fast and you have probably fixed the plan of a gorgeous party. Have you decided on the menu yet? If not, we’d like to present you the recipe of a delish dish where baked mushroom caps come with sweet-and-savory filling. We’ve collected these New Years Appetizer Recipes from The Food Network and Stagetecture’s archives just for your party!
New Years Appetizer Recipes: Sausage Stuffed Mushrooms
Ingredients:
Yields 24 mushrooms
24 gourmet mushroom caps (stems cut off; set aside brushed with a damp towel)
1 tablespoon Extra-virgin olive oil
Pepper
For Stuffing:
3/4 pound Sweet bulk Italian sausage
3 slices White bread, toasted, buttered, and chopped into small pieces
20 Mushroom stems, finely chopped
1 10 oz. box Frozen spinach, defrosted, squeezed dry, and finely chopped
1 rib Leafy part of celery and green, finely chopped)
½ red bell pepper small sized; seeded; finely chopped
4 cloves Garlic, finely chopped
½ small onion, finely chopped
1/3 cup grated Romano or Parmigiano cheese
1 1/2 teaspoons Extra-virgin olive oil
Directions:
- Preheat oven to 425°F.
- Take a large frying pan and heat it over medium-high heat. Pour extra-virgin olive oil and add mushroom caps into it. Then, add pepper and salt for seasoning the mushrooms.
- Saute the mushroom caps until they turn light brown and their edges become tender or for 5 to 7 minutes. Turn the caps up so that the juices get drained away from them.
- Take a nonstick baking sheet and place the caps there. Clean the frying pan and heat it again over medium-high heat.
- Heat extra-virgin olive oil to the frying pan and add sausage into it. Cook for 3 minutes or until the sausage becomes brown and crumble.
- Take a food processor and pulse to chop garlic cloves, mushroom stems, red bell pepper, onion, and celery gradually.
- Add this vegetable mixture into the frying pan and sauté for 3 to 5 minutes. Keep the heat at medium-high level. Put spinach into the mixture and gradually add bread and cheese. Cook and occasionally toss the stuffing for 2 to 3 minutes or until the bread is soggy and all the ingredients start sticking together. Stop the heat.
- Use a spoon to fill the caps with stuffing. Now, transfer the caps to the preheated oven and reduce the heat to 400°F. Bake for 6 to 8 minutes. The baking will set the stuffing inside the caps and make the stuffing edges crisp.
- Serve the stuffed mushrooms hot!
