Valentines Day Red Velvet Whoopie Pies

Valentines Cake Directions:

For the Cookies:

1 ounce semisweet chocolate, chopped

1/2 ounce milk chocolate, chopped

12 tablespoons unsalted butter, melted

1/2 cup sour cream

2 large eggs

1 1/2 teaspoons apple cider vinegar

1/2 teaspoon vanilla extract

1 tablespoon red food coloring

2 1/4 cups all-purpose flour

1 cup granulated sugar

1/4 cup unsweetened cocoa powder

2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

For the Filling:

8 ounces cream cheese, at room temperature

3 tablespoons unsalted butter, at room temperature

2 1/2 cups confectioners’ sugar, sifted

1 vanilla bean, halved lengthwise and seeds scraped

Valentine Dessert Directions:

Make the cookies:

Preheat the oven to 375 degrees F. Line 2 large baking sheets with parchment paper. Combine the semisweet and milk chocolate in a microwave-safe bowl and microwave at 50 percent power until melted, about 2 minutes. Whisk until smooth.

Whisk the melted butter, sour cream, eggs, vinegar, vanilla and food coloring in a bowl until combined. In another bowl, whisk the flour, sugar, cocoa powder, baking powder, baking soda and salt.

Add the flour mixture to the butter mixture in four equal batches, whisking each batch completely before adding the next. Stir in the melted chocolate.

Scoop heaping tablespoons full of batter onto the prepared baking sheets and smooth the tops with a damp finger. Bake until the cookies spring back when lightly pressed, 8 to 10 minutes. Let cool 10 minutes on the baking sheets, then transfer to racks to cool completely.

 Make the filling:

Beat the cream cheese and butter with a mixer until smooth. Beat in the confectioners’ sugar and vanilla seeds. Sandwich a heaping tablespoonful of filling between 2 cookies; repeat with the remaining cookies and filling. Refrigerate 30 minutes before serving.

Easy Valentines Dinner Recipes for Two: Marinated Steak

Ingredients

2 servings

2 – 1/2 pound each rib-eye steaks

2 tablespoons honey

3 tablespoons minced garlic

1 teaspoon onion powder

1/2 teaspoon liquid smoke flavoring

1 pinch cayenne pepper

2 teaspoons ground black pepper

1 teaspoon Worcestershire sauce

1/4 cup soy sauce

1/2 cup balsamic vinegar

2 tablespoons olive oil

1/2 teaspoon salt

Directions

1. Mix together olive oil, honey, vinegar, Worcestershire sauce, soy sauce, cayenne pepper, ground black pepper, liquid smoke, onion powder, minced garlic, and salt in a medium bowl. This makes the marinade for the steaks.
2. Pour the marinade in a shallow glass dish and place the steaks. Turn to coat. You can also rub the marinade into the steaks to give them the perfect flavor.
3. Cover the steaks with a plastic sheet or aluminum foil and keep in the refrigerator for 1/2 days to marinate. Remove them from the refrigerator before grilling.
4. Preheat the grill at medium-high to high heat.
5. Brush oil lightly on the grill grate. Place the steaks on the grill and cook each side for 7 minutes. The duration can be different depending on how much grilled you want your steaks to be.
6. Discard the leftover marinade or use in any other preparation where you think suitable.

The tender steaks soaked in this beautiful marinade will turn more tender and juicy after grilling. The meat will just melt in your mouth and the tasty marinade will leave an exquisite flavor into your tongue. All the ingredients used have made the marinade so perfect that it complements the steaks very well rather than overpowering meat’s inherent flavor.

If you don’t have enough time for marinating, poke holes into the steaks and then soak into and rub with the marinade very well. They will be turned out equally tender, tasty, and flavorful.
