There’s no shortage of delicious food during football season. Savory favorites like pulled pork sliders may make up most of your Game Day menu, but here at Stagetecture, we believe that no meal is complete without a little something sweet! Tailgating Dessert: Peanut Butter Brownie Bites

Ingredients
For Brownies:
5 ounces unsweetened chocolate, chopped
¾ cup butter
1 ½ sugar
1 cup flour
1 teaspoon vanilla extract
3 eggs
1 cup semi-sweet chocolate chips, plus more for garnish
For Peanut Butter Filling

1 ½ tablespoons butter, softened
½ peanut butter, at room-temperature
¾ cup confectioners’ sugar

Preparation:
- Heat a saucepan over low heat and melt the butter for the filling. Add in the peanut butter and stir until a cohesive sauce forms.
- Turn off the heat and add in the confectioners sugar until the mixture becomes pliable. Wrap it in plastic wrap and refrigerate for 30 minutes to an hour.
- Meanwhile, preheat the oven to 350 degrees F.
- In another medium saucepan, melt the butter and chocolate over low heat until the mixture becomes smooth and glossy. Then, remove it from the heat and allow it to cool for five minutes.
- Stir in the vanilla extract and sugar.
- Add in the eggs, one at a time, followed by the flour.
- Once a cohesive batter forms, fold in the chocolate chips.
- Assemble the brownies in greased muffin tins. Pour just enough batter in the bottom of each cup to form an even layer of batter. Then, place a small chunk of the peanut butter filling in the middle and top it with another layer of batter.
- Transfer the brownie bites into the oven and bake for 8-10 minutes or until set.
- When done, transfer the brownie bites to a wire rack to cool. When they are just barely warm, top each one with an extra sprinkling of chocolate chips.
Brownie bites are a particularly great choice for a tailgating dessert because they’re so portable. Consider using cupcake liners in your muffin tins to make snacking even easier. (If you’re feeling particularly festive, you could even choose liners in your team’s colors.) You might want to consider doubling the amounts. This is one dessert recipe that that your friends and family will go nuts over.
