It’s simple to make and you can be done in no time, which really is a big plus when you want to avoid all this before holiday hectic. Thanksgiving Dessert: Cranberry Fudge

Ingredients
1 can (14 ounce) sweetened condensed milk
3 cups of white baking chocolate pieces
2/3 cup dried cranberries, coarsely chopped
½ cup pistachio nuts, coarsely chopped and roasted (optional)
2 tsp orange zest, finely shredded (optional)
1 tsp vanilla extract
Butter or cooking spray (optional)

Directions
- Prepare an 8x8x2 inch baking pan by lining it with wax paper or foil. Make sure to cover all the edges completely. If using foil, butter it or spray with cooking spray.
- Take a heavy saucepan and pour in the sweetened condensed milk. Over low heat, stir in the chocolate pieces and melt them until you have a smooth mixture. Make sure you don’t overheat the milk and chocolate. Alternatively, you can use a double boiler. As soon your mixture is smooth, remove it from heat. Add most of the cranberries, most of the pistachios, the orange zest and the vanilla extract and stir.
- Pour the mixture into the pan and spread it evenly. Take the remaining cranberries and pistachios and sprinkle on top of the mixture. Cover the pan and chill for at least 2 hours, until the fudge is firm.
- With care, take the fudge out of the pan by lifting it using the edges of the waxed paper or foil. Cut the fudge into squares, using a sharp knife.
This fudge can be kept in an airtight container in the fridge for up to one week. The great thing about this Thanksgiving Dessert is that it is highly versatile and you can tweak it so it fits your taste even better. Try using other types of nuts as substitution for the pistachios, like macadamia nuts, pecans, almonds or walnuts. Also, you can use other dried fruits as well, or candied fruits, either substituting the cranberries completely or just a part of them. Another thing you could do is to use semisweet chocolate chips, which of course would have a completely other outcome, both in taste and in appearance.
