Yields: 12 servings
Ingredients
2 medium potatoes, peeled and cut into one inch pieces
3 medium carrots cut into once inch slices
1 medium chopped onion
1 diced celery rib
2 tablespoons butter
1 tablespoon olive oil
6 tablespoon all-purpose flour
3 cups chicken broth
4 cups cubed cooked turkey
2/3 cup peas, frozen
½ cup + 1 tablespoon heavy whipping cream, divided
1 tablespoon fresh parsley, minced
1 teaspoon garlic salt
¼ teaspoon pepper
15 ounces (1 package) refrigerated pie pastry

Procedure
- Preheat oven to 375 degrees. In a Dutch oven, sauté, carrots, potatoes, celery, and onion in butter and oil until tender. Stir in flour until blended. Slowly add broth. Bring to a boil, cool and stir for 2 minutes or until thickened. Stir in peas, turkey, ½ cup cream, parsley, pepper, and garlic salt.
- Spoon into 2 ungreased 9 inch pie plates. Roll out pastry to fit the top of each pie. Place over filling. Trim, seal, and flute the edges. Cut slits in pastry or cut out a decorative center. In a small bowl, whisk egg and remaining cream. Brush over pastry.
- Bake for 40-45 minutes or until golden brown. Let it stand for 8-10 minutes before cutting.
Freeze option: You can cover and freeze unbaked potpies for up-to 3 months. To use, remove from the freezer 30 minutes before baking. Place pie on a baking sheet and cover edge loosely with foil. Bake for 30 minutes in a preheated (425 degrees) oven. Reduce oven setting to 350 degrees, remove foil. Bake for 55-60 minutes longer or until golden brown. A thermometer inserted in the center should read 165 degrees.
