Healthy Meal: Mango and Avocado Salad

Ingredients (makes 4 servings)

1 medium mango, seeded, peeled and cut into chunks

1 medium tomato, cut into chunks

1/3 cup thinly sliced red onion

2 tablespoons snipped fresh cilantro

2 tablespoons olive oil

1 tablespoon white wine vinegar

1 tablespoon lemon juice

1 clove garlic, minced

¼ teaspoon salt

1/8 teaspoon freshly ground black pepper

1 medium avocado

Directions

To make this healthy meal, combine the mango, tomato, and red onion in a medium bowl.

For the dressing, use a screw-top jar. Combine the cilantro, vinegar, olive oil, garlic, lemon juice, salt and pepper, cover the jar and shake to blend well. Pour the dressing over the salad and toss it gently so the dressing coats all ingredients. Cover the salad and chill it for up to 4 hours.

Just before serving, halve, peel, seed and cut the avocado into chunks. Stir in the avocado chunks into the salad and serve on the lettuce leaves.
