Who says you can’t use slow cooker to prepare the sweetest meal of the day? Most people use this handy kitchen device only to cook dishes like chilli, stews and so on. But let me tell you that it’s actually possible to bake all kinds of desserts from chocolate cakes to velvet cake and many more in between like brownies, puddings, and cookies. And yes, very good ones. Try this slow cooker dessert recipe called ginger pudding cake and find it out for yourself.
Slow Cooker Dessert: Gingerbread Pudding Cake

Total time: Preparation 20 minutes + cooking 2 hours + standing
Yields: 6-8 servings
Ingredients
¼ cup softened, butter
¼ cup sugar
1 egg white
1 teaspoon vanilla essence
½ cup molasses
1 cup water
1 ¼ cups all purpose flour
¾ teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon ground ginger
Pinch of salt
¼ teaspoon ground allspice
1/8 teaspoon ground nutmeg
½ cup chopped pecans
Topping ingredients
6 tablespoons brown sugar
¾ cup hot water
2/3 cup melted butter

- In a large bowl, cream sugar and butter until light and fluffy. Beat in egg white and vanilla.
- In a separate bowl, combine water and molasses.
- In another separate bowl combine all purpose flour, cinnamon, baking soda, ginger, salt, allspice, and nutmeg. Now gradually add to the creamed mixture alternating with molasses mixture. Beat well after each addition. Fold in pecans.
- Pour into a properly greased 3-qt slow cooker. Sprinkle the brown sugar. Combine butter and hot water and pour over batter. Do not stir.
- Cover and cook on high heat for 2 to 2 ½ hours or until a toothpick inserted in the center of the cake comes out clean. Turn off the heat. Let it stand for 15-20 minutes. Serve warm.
Come home to this sweet and scrumptious slow cooker dessert that is ready the moment you walk in the door. Finish it with a dollop of whipped cream and mint sprig on the top.
